Josh is right.
Jitter. It is more than bits. It is bits and a clock...data is for spreadsheets, but audio is data WITHIN A TIME PERIOD.
And do remember that as much as the computer people will tell you bits is bits and digital is digital the actual signal is analog. Sure the bits are encoded in the analog signal, but it is still analog so better psus and outputs can affect things.
Anyhow, here is a post by John Swenson who is an engineer for hire and actually did the usb section on the touch, and was a beta tester. Doubtful there are many who know more about it than he does:

And fwiw, I take a middle ground. Sadly NOTHING I find worth listening to will ever be released in high res. Rejoice that you can find such material. So the middle ground is that I upsample my 16/44 to 32/192 and while this in and of itself is controversial and the sampler one uses makes a big difference I am happier with the upsampled sound.
And I have found out first hand that the software in the computer (the touch is just a small computer) can make a huge difference on the sound...drivers and os make a big difference even if the bits are perfect. And as a computer it has an rf footprint that mags can be an antenna for..
