As between the two: Kind of Blue; but A Love Supreme also gets played, not just given lip service.

And, returning somewhat to the OP's question; lately, I've been enjoying Miles's "Jack Johnson" more than any of his other releases. It feels as though "Bitch's Brew" was an unfocused jam-type rehearsal for JJ.
