Had to bring the ribs in as a huge storm hit, temps dropped, about the time I needed to restoke the smoker, so 3 hours over pecan wood and lump charcoal and 2 hours in the oven. The chicken was de boned and stuffed with shrimp and rice. The boy bought it at some cajun joint in So. La. and bought it up here for their visit. First pic is guac and a tasty brisket queso from HEB groc store that was criminally good. Left off the corn n the cob, was going to grill it but storm and such made us boil it. No pic taken

Our grocery store has several deboned stuffed birds. We used to do the one with jalapeņo cornbread stuffing. That was very good for awhile but apparently the stuffing preparer must have moved on and the stuffing got too dry for my taste. There is also a crawfish stuffing that is probably good, but I'm allergic to shellfish.
I was going to smoke ribs Saturday, but time got away from me, and I has to cook them in the oven, came out pretty good with potato salad and corn. How was that chicken?

We ate darn near the whole thing in addition to the ribs, corn, dips and chips and salad. The ribs didn't look perfect as a long finish in the oven changes the exterior but they were pretty, pretty, pretty, good. Here's a pic of 5 hour, outdoor ribs we did a while back
