If you are refering to filter caps, yes I have done this quite often in tube amp mods. More capacitance is always a good thing. For example, I have replaced the 470uF caps in one of my tubes amps with 560uF pieces with exceptional results. Try to find caps with the lowest ESR also. This is a great benefit. Panasonic makes some good affordable pieces with very low ESR. Bypassing this with a good film and Foil cap will also be beneficial.
