You've already gottem some good info here but I'll add my $0.02 worth. Temp control is great for small work on PCB. Too low a temp and you get "cold" joints. Conversely, too hot can damage both the device and the PCB (don't ask how I know this). And yes on some temp control stations powering down to save $$ (which is sort of silly IMO). I want an iron that's ready to solder when I'm ready, not making me wait for it to warm up (good chance of cooking what ever I'm soldering!) I use three irons. A nice Hexacon temp control 25W micro station, excells for really tiny work. A good 30W weller iron w/ a narrow chisel tip. & a big-ass 100W "pistol" model for heavy work (like cable ends, chassis work, etc.).When it comes to solder slinging I use flux and I pre-tin all my connections. That way one touch and *** done! Good joint flow and the PCB and device don't get toasted. This does take more time, but... I'm in this for the enjoyment, speed is not a factor.
