To summarize, this is the general rule of thumb:
-low impedance source (1K) and low impedance driven device(10K Mosfet or SS amp) : use 5K to 10K pot;
-medium impedance source(e.g. tube phono stage with cathode follower) and high impedance (tube) load: use 100K;
-high impedance source(e.g. tube phono stage with NO cathode follower) and high impedance (tube) load: use 250K.
