mains switches i think don't do anything to the sound. that said, you don't want some crappy thing to play with - if you must go rotary, then a grayhill or elna or something like that will do. if you want something thats well built, pick up a nice NKK toggle switch. cheaper and i promise you won't regret it once you check out the construction.
as for the connector - how many wires will you need to connect? the neutrik speakon system can handle up to 4 or 8...though i couldn't really tell you where to buy the wire for that sort of thing...depending on the voltages, you could probably get away with a DIN connector.
