I have just add 1 digital out to my Panasonic LP player.The very important thing you need to do is to find out the signal processing LSI type used in your player. When I found it, I searched in the web for the datasheet, to look for a digital audio interface section. The output pin from this section should be the place to tap out the digital signal, presumable in S/PDIF or compatible format.
You might as well search the web for modification hints, I guess the Pioneer is a rather common gear being modified.
