Two things:
One, the higher quality caps mayu be letting more transients and detail through, making things seem brighter. In a sunse, they are brighter, because less is lost.
Second, the increase in the cap values will do to things that add up to an amplitude change: makign the woofer cap slightly larger without changing the inductor may cause some peaking of the woofer just before it rolls off, and the tweeter will now go a bit lower. The combination could cause an amplitude bump right near the crossover frequency, which is probably in the midrange or upper midrange, which could make things sound brighter too.Probably both things are occuring, and the combination is what you hear.
