The poly will be really expensive for the quantity that you need, which is why (I think) Jon uses the fiberglass. Don't worry about the fiberglass getting all over the place, it usually comes off in big chunks, not lone fibers, and it's easily vacuumed up. What you do want to do though is wear eye protection, a face mask, long sleves, and gloves, just in case. You do NOT want to get that stuff in your eye or breathe it in. And getting poked by the little fibers can make you itchy.
Note that Jon's designs usually (always?) surround the fiberglass with a layer of poly fiber to prevent potential problems.
