It depends on how you plan to use the balls. If you're using them in a roller bearing setup, then the quality and size of the bearing surface (dish) will come into play.In general, the smaller the ball, the better. The bearing surface will, however, determine the smallest ball you can use. The smaller a ball is, the more it will be affected by bearing surface imperfections. The point of diimishing returns can often be determined by placing a ball in the dish and observing what happens as the ball comes to rest. If the ball comes to rest very smoothly and slowly, the ball is not too small. When you get down to a ball that is too small, you will notice irregularities in its movement as it settles.
With my DIY rollers, I've found 3/4" balls to give the best performance. Larger balls did give a smoother top end, but at the cost of slightly muddier bass. Smaller balls cleaned up the bass, but at the cost of some high end harshness. With the machined rollers I've tried, 1/2" balls seem to work best.
The bottom line is you'll have to experiement to see what sounds best to your ears. It seems that most people prefer 1/2" balls the most, with a few folks using larger balls, and perhaps a few using smaller ones.
