If I read your post correctly, you should be able to do this with a pair of DPDT switches & connect the grounds to chassis if you use a box (or some kind of ground plane).Yes, there are different grounding schemes & switches to change the grounding if you want to do that, but IMO it's best to keep it simple at first and then get tweaky later on.
