...how you are using the XLR cables. Are they plugged into your RCA's through some sort of adapters?

What is that additional noise that you hear? Could be many reasons. For instance, some cables have poor shielding and will pick up 60Hz in some locations, be sensitive to routing near power transformers, etc.

Both RCA or XLR connection can be either noisy or quiet depending upon how it is designed.
