These different taps give different voltage ratios on the output transformer. The voltage increases as you increse the impedance. However if you run the unit in 16 ohms setting into 8 ohm speakers you risk overloading the output stage.
I am not great with tube amps but I think this will mainfest itself as overheating the output tubes and transformer and possible saturation of the output transformer which would cause gross distortion.
My recomendation would be by all means try the 4 ohm setting you will get less power but possibly a slightly better current delivery. However be very careful if you use the 16 ohms setting as you risk damaging your output stage.Andy.
