Yes. And hardly the least expensive method (though in my opinion the preferable method if you want balanced outputs to begin with). But since he says the transformers are being fed by 4 NE5534s, it would seem the signal is balanced before going into the transformers. So they're likely using the transformer not only for isolation, but also to create what's called a three-opamp instrumentation amplifier, effectively replacing the third opamp (which is responsible for the common-mode rejection of this particular configuration) with the input of the output transformer which would have very good common-mode rejection performance.
