tube matching

I'm thinking of going Tube.

Several amps are being looked at but ONE question applies to all.

Amp #1? A SINGLE bias adjustment for the quad of output tubes. I'm told these must be replaced AS AS SET OF 4......
Amp #2 has a single bias adjust PER TUBE.

In the first case, if a tube fails I'm into it for a quad 'matched' set.

In the 2nd case? Hw important is the tube BRAND? If it comes with new manufacture tube of type A......what happens if someone gifts me some classic NOS type? Will the sound of the amp change on that basis? Or should a single failure end up with replacing a Pair? Than you are left with the differences in sounce between channels.
