If it were me I'd start by really thinking about why I'm changing speakers and what I want to improve. If the answer is that I just want something new that's OK too. I've certainly done it.
I haven't listened to speakers at a dealer in a long time. As far as format, I'd just tell the dealer which format I'll be bringing to the audition. If they can't support your choice either choose another format or dump that dealer. And don't hesitate to use music that you think your dealer might not like. It doesn't matter what they think. It's your money. But do be respectful of the dealer's time. Don't forget about things like warranty, post purchase support, resale value and delivery time.
That's quite the list you have. I'd start with the speaker I think I'd most want. Then move on to the next in terms of preference. Unless it were a matter of some urgency I'd take my time. I'd try not to overthink it. I'd try very hard not to research the speaker until my fingers begin to cramp. I'd be as sure as possible I'd be taking a step forward and not to the side. I'd just go with what I thought would would bring me joy, assuming I could afford it.
