Besides Kind of Blue those 'other guys' mentioned (who are they, anyway?), check the Coltrane thread above for my recs there. Go to the Fantasy Jazz link, and check out the Prestige 50th Anniversary reissues, as well as the Riverside K2 remasters. All sound excellent (and are jazz classics), but I would specifically recommend Kenny Dorham, 'Quiet Kenny' and Art Pepper, '...Meets The Rhthym Section'.
