I would second the recommendations already made. I would like to add a few jazz pianists not already mentioned:

Randy Westin
Bobo Stenson (a personal favorite)
John Lewis (MJQ)
Roland Hanna
Oscar Peterson
Any of Miles Davis' pianists (Chick Corea, Evans, Hancock, Jarrett, etc)
Matthew Shipp
Gerri Allen
Cecil Taylor
Dave Brubeck
Bud Powell

While not outstanding pianists, both Diana Krall (especially "Love Scenes") and Patricia Barber put out decent jazz piano/vocal, with a bit of pop flair, records.

The list could go on and on good & great jazz pianists. Go out and buy some of the classics first, and work your way out from thier.
