'Trane and Lacy are basically responsible for every other "modern" saxophonist - like Shorter and Liebman - playing the axe.Nowadays there are quite a few fantastic soprano players. In the vein of Zoot, the late Joe Temperley - known for his baritone/b.clar. playing - sounded great on soprano. The gold standard in the "old days" was Bechet.
Dunno that I could pick a fave, but 'Trane, Lacy, Shorter and Liebman might be my top four. Another guy who plays great on soprano is the amazing Brazilian musician Hermeto.
