Barber (orchestral works, incl. Adagio, School for Scandal, Essays for Orch., etc.) by Baltimore Symphony/David Zinman on Argo.
Knoxville, Summer of whatever the hell year it was - Dawn Upshaw. It also has a few other nice pieces of the same ilk by Menotti, Stravinsky, and Harbison. Dawn Upshaw is a fantastic singer. On Nonesuch.
Complete Published Piano works on Naxos. Ranges from schlock to powerhouses, but overall it's pretty good stuff, and at a Naxos price.
Emerson String Quartet - American Classics. Has the Barber SQ (so you can hear how the Adagio REALLY sounds - it's much better in the quartet), along with some nice Ives quartets.

For Faure (you know, I've considered starting a Faure discussion before, but was afraid everyoine would think I was a pansy :-):
Requiem/Pelleas/Pavane: Dutoit/Montreal on London/Decca. It's fabulous.
String Trios: Beaux Arts Trio on Phillips.
Piano Works: Pascal Roge on London. A lot of parlor pieces, but it's great background music.
Naxos has a recording of his violin sonatas that I'm about to order.
