In my opinion, Barber's music is at it's best when he leans either towards sheer beauty, or sheer power. I am less interested, but not uninterested, in his more "abstract" sounding music -- which can often be found in his music for voice.That said, my first recommendation includes vocal music :-)
There is a CD that includes Barber's "Knoxville - Summer of 1915" along with Aaron Copland's "Eight Poems of Emily Dickenson" with the London Sym. Orch. conducted by Michael Tilson Thomas, and sung by Barbara Hendricks. Barbara Hendricks has one of the most gorgeous voices you'll ever hear. This CD also includes the famous "Adagio for Strings". DDD recording. I'd start here. EMI 55358.

Along with Copland, Barber is perhaps the greatest of American composers. The next "tier" includes David Diamond, Walter Piston and Howard Hanson. All great, and worth seeking out.
