For classical, check out Meridian and early (analog mastered) BIS recordings for some very good examples of 2-mic recordings. Some of the most natural CD's I know of are on those two labels. In particular, check out the Parry piano trios on Meridian and Brahms piano trios on Bis. When done right (which is not easy) the 2 mic technique is fantastic. However, the engineer must place them in the right place so that there is not too much hall sound whicg obscures the recording.
