For jazz, look into Chesky Records

Unlike Gene Pope who used a spaced pair of B&K/DPA omnis, I believe Chesky Records specializes in Blumlein-technique recordings. They also have quite a few jazz releases. (Blumlein: a coincident pair of figure-8 mics angled at 90-degrees with respect to each other.) If you want imaging, the Blumlein technique delivers. On the downside, I find it produces a little too MUCH image specificity and rolls the bass off somewhat... but I'm nitpicking.

For classical, also check out Water Lily Acoustics whose enigneer, Kavi Alexander, uses the Blumlein technique extensively.
