I started collecting classical vinyl about ten years ago. Initially, the audiophile in me relied on recommendations from The Absolute Sound, Stereophile, etc. As Fredi mentioned, a great recording on a good playback system (or a live concert) makes it easier to get into the music. Anyway, about two years into my classical adventure, I stumbled onto Bruno Walter's Beethoven Symphonies on Columbia (D7S-610). What a revelation - I've often thought, why didn't I start with this music? All nine are wonderful, but especially the unsurpassed performance/recording of the 'Pastorale' 6th Symphony.Regarding Tchaikovsky symphonies, I believe his 5th is more accessible than either of the more critically-acclaimed 4th or 6th. I have the Pierre Monteux/Boston (RCA LSC-2239, 1958). A great shaded-dog recording by RCA's legendary team of Mohr/Layton.
Enjoy the adventure.
