FLAC is an option when you select WAV

I was confused about that at first too. You want to select WAV as the file type, then there will be an option to specify FLAC and compression level. All levels are lossless, but the more compressed they are the less space they take up (and I suppose take longer to uncompress?).

I use level 5 which is the default.

You want the "CD Ripper" - see link below.

Get the "Reference R17 Single PC" (windows or Apple, whichever you have) for $39 and it should be all you need to rip CD to FLAC files.

But you can try it free for 21 days, so definitely do that to make sure it is suitable.
