Tempo variations are measured in time units several orders of magnitude larger than any reasonable jitter can produce. There is no possible explanation in that regard that I can think of, other than jitter distortion affecting involvement with the music. Toe tapping is not an automatic reflex resulting from tempo. It is a sign of the listener's psychological involvement with the music. That is why it varies from person to person, as well as with the listener's predisposition at that precise moment.
