Go for the 63/37, especially if you can get it in the .031 size, IMO.
I agree- if you're a beginning solder slinger, the Kester 63/37 is great stuff. You may later want to branch out, but this is hard to get a bad joint with and will sound great. The .31 would be easier for point-to-point, and has to be available somewhere for a good price. The narrower is better for printed circuit boards, but either will do ok for these kits.

For pc boards, the smaller is preferrable. Certainly, the smaller diameter is perfectly usable for point-to-point, you will just need to feed a bit more into the joint.
